Unchartered is probably a series I've enjoyed most. It does well in giving enough freedom but a good structure and engrossing storyline. Not just giving into seeking having the biggest map.
For me it's easily Fight Night. Pressuring the opponent, catching/rolling his hook and instantly returning one of your own and doubling up to the body. Slipping his return shot and crashing your right fist against his jaw.
The list is extensive though I lean towards CRPGs mostly, Baldurs Gate series, KoTR, Pathfinder I & II, NWN I & II, Wasteland series, PoE I & II. Special mentions from other genres: The Deus Ex series, VTMB, Dragon Age series, Mass Effect series, Elder Scrolls series, Borderlands series, X-Com family, Dishonored series.
Not finding much time recently TBH though... same as I ain't finding as much time to post on here. Seems like RL is kinda keeping me busy right now which is probably a good thing.
I have to say I am impress that a man close to 50 years old basically one of the older gen Xers has a good knowledge of video games. From my experience it's usually the millennials on down that's still very heavily into gaming. Most of the gen Xers I know gave up gaming around the mid 90s after the SNES/Genesis era.
Favorite games of all time for me? I'm basically an RPG guy, either western or Japanese types.

Games before the 90's looked and played like ass! Don't know how u old timers played that stick figure sht. Most didn't even have cut scenes or even an ending??? Just played for high score lame sht.
I used to be big into MMO games like, World of Warcraft, but stopped playing MMO's altogether due to the time you need to sink into them. These days I play the Diablo franchise when I can. I've played D2, D3, Immortal, but have not really indulged too much lately. I'm always hit and miss in terms of when I play. I can go 1-2 years without touching a game, then I'll play consistently for 3 months and stop cold turkey. If I play XBOX games, its usually like NHL latest game. Although I will admit that I bought and played Star Wars Legos The Skywalker Saga which is pretty fun. My 4 year old plays it more then I do now.

Loved the Deus Ex series, specifically 1-2. KotR 1-2 was amazing too. I played a lot of Baldurs Gate and Icewind Dale. Neverwinter Nights I played for a little bit, but never stuck with. Great catalog of games, man!

Not a big RPG guy, but I loved the classics like Final Fantasy VII and Zelda Ocarina of Time. Chrono Trigger is my favorite RPG, probably the best storyline for any video game of its time.
I grew up in the 80s and 90s, so I'll always have a soft spot for the 16 bit era, and the OG Playstation.
I have a PS5, but no actual PS5 games, just playing the PS4 games that I haven't finished yet.
I still love games, but I'm 40 now and I just don't have as much time as I wish.
